Kekstorte (German Biscuit Cake) is a traditional German recipe for a classic egg, sugar and coconut butter cake flavoured with vanilla, cocoa powder and rum that's arranged between layers of butter cookies (biscuits). Also known as Kalter Hund or Kalte Schnauze this is a classic German no-bake cake that's also prepared in Denmark and the Netherlands.
Ingredients:
1 egg
180g sugar
1 tsp vanilla extract
60g cocoa powder
160g coconut oil (coconut butter)
60ml rum
35 square butter cookies
slivered almonds, to decorate
Method:
Cream together the eggs, sugar and vanilla extract until pale and foamy. Meanwhile, melt the coconut oil in a pan and set aside to cool a little before using.
When the coconut oil has cooled add the egg mix along with the cocoa powder and stir well to combine. Take a loaf tin and line with greaseproof (wax) paper. Add a single layer of the biscuits to the base then add a layer of the cocoa cream. Now add another layer of biscuits, followed by the cocoa cream. Continue layering in this fashion until all the ingredients have gone (finishing with a layer of the cocoa cream).
Transfer to a refrigerator and chill over night, until completely set. The following day decorate as desired then cut into thin slices and serve.
