Kartaeuserkloeße (Carthusian Dumplings) is a traditional German recipe for a classic sweet dumplings made from bread, breadcrumbs, milk and lemon zest bound with eggs that are deep fried and rolled in cinnamon sugar before serving. Ingredients:
4 stale, hard, rolls (kaiser-type)
1 egg, separated
250ml milk
freshly-grated zest of 1 lemon
20g sugar
2 tbsp vanilla sugar
140g plain breadcrumbs
1½ tbsp water
3 tbsp sugar
1 tsp cinnamon
oil for deep frying

Method:
Whisk together the egg yolk, milk, lemon zest and sugars. Now shape the rolls into dumplings by rubbing the crusts away from all sides. Place the resultant dumplings into the milk mixture. Once the liquid has been absorbed about half way through all the rolls gently squeeze out any excess liquid.
Now whisk together the egg white and water. Dip the dumplings in this mixture then roll in the breadcrumbs to coat evenly on all sides. Heat the oil in a wok or deep fryer and use to deep fry the dumplings until golden brown all over. Combine the remaining salt and cinnamon, roll the fried dumplings in this and serve.
