Kanyan
Garri is dried and grated cassava and here it's mixed with home-made peanut paste for a protein-rich snack
Ingredients:
60g of Garri (fermented cassava meal)
175g of Groundnuts (Roasted Peanuts)
1 1/2 tbsp of Sugar
3 tbsp of Honey
Method:
In a blender or food processor, pulse the garri to chop then process to a fine powder. Also separately process the peanuts to a paste.
Mix together the garri and ground peanuts in a mortar. Mix in the sugar then slowly add the honey whilst pounding with a pestle until the mixture is smooth and binds together.
Turn the mixture onto an oiled work surface and form into a large square shape. Cut into small squares and serve.
Alternatively, scoop the mix into your palm and roll into a ball.
