Kalter Kartoffelsalat (Cold Potato Salad) is a traditional German recipe for a classic salad of boiled and cooled potatoes with onions in a mustard, vinegar, sugar and dill seed dressing. Ingredients:
6 large potatoes, peeled and quartered
1.5l boiling water
1/2 tsp salt
1 medium onion, minced
3 tbsp vinegar
1/2 tsp prepared mustard
1 tsp sugar
2 tsp dill seeds, lightly crushed
Method:
Add the water and salt to a saucepan and bring to a boil then use to cook the potatoes until tender (about 25 minutes). Drain the potatoes, reserving 180ml of the cooking liquid.
Allow the potatoes to cool until they can be handled then dice them and transfer to a bowl. Add the oil and minced onion then toss gently to combine. Cover and allow to marinate at room temperature for at least 2 1/2 hours.
At the end of this time stir-in the vinegar, mustard, sugar and dill seed. The final consistency should be creamy.
