Ingredients:

2 tbsp butter
2 garlic cloves, crushed
1kg green (string) beans, cut into 3cm lengths
700g tinned, chopped, tomatoes
1 tbsp finely-chopped chives
1 bayleaf
1 tbsp pine nuts, chopped
1 tbsp lemon juice
salt and freshly-ground black pepper

Method:

Melt the butter in the base of a large pan. Add the garlic and fry for 2 minutes, stirring constantly. Now add the green beans and cook for 4 minutes more, again stirring constantly.

Stir in the tomatoes (along with their juice) then add the chives, bayleaf, pine nuts and lemon juice. Season to taste with salt and black pepper then bring the mixture to a boil. Reduce to the heat to a low simmer and cook for about 30 minutes, or until the beans are very tender and the sauce has thickened a little.

Remove the bayleaf and turn the bean mixture into a warmed serving dish. Serve immediately.
