Irish Rink Cake

Ingredients:

120g plain flour
1/2 tsp baking powder
60g butter, softened
60g blanched almonds, chopped
120g caster sugar
2 eggs, beaten
20g currants

Method:

Sift together the baking powder and flour into a bowl. Dice the butter, add to the flour and rub in with your fingertips until the mixture resembles fine crumbs.

Add the sugar then work in enough of the beaten eggs to give the batter a dropping consistency. Turn the resultant batter into a greased 20cm diameter sandwich tin, the base of which has been lined with baking parchment.

Mix together the currants and almonds and sprinkle evenly over the top of the cake. Transfer to an oven pre-heated to 170°C and bake for about 20 minutes, or until cooked through and springy to the touch.

Allow to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely before slicing and serving.
