These are little honey cakes made with oatmeal and dried fruit. They are at their bast when just freshly baked.

Ingredients:

60g plain flour
1 1/2 tsp baking powder
180g oatmeal
90g butter
90g honey
1 tbsp milk
1 egg, beaten
60g currants or sultanas (or a mix)

Method:

Sift together the flour and baking powder into a bowl. Stir in the oatmeal then rub in the butter.

Warm the honey in a bowl set over a pan of barley-simmering water. Stir in the milk and the beaten egg and whisk until well combined. Add this honey mixture to the oatmeal mix, stirring to combine well.

Add the dried fruit and stir lightly to mix evenly. Using a spoon place small heaps of the batter about 5cm apart on a well-greased baking tray. Alternatively, use a spoon to pack the mixture into the base of silicone cupcake moulds and bake in the moulds.

Transfer to an oven pre-heated to 200°C (Gas Mark 6) and bake for about 20 minutes, or until golden brown and cooked through.
Allow to cool on the baking tray for a few minutes then transfer to a wire rack to cool.

Best eaten very fresh.
