Honey Cake

This is a plain version of a sponge cake flavoured with honey that can be made richer with fruit and spices. Consider this as a base recipe that you can adapt and vary to suit your own tastes. If you are making this basic recipe however, you need to choose a flavoursome honey. Heather honey is good and would be traditional.

Ingredients:

120g butter
45g soft brown sugar
2 tbsp clear honey
2 eggs, beaten
180g plain flour
1 tsp baking powder
3 to 4 tbsp milk

Method:

Cream together the butter, sugar and honey in a bowl until light and fluffy. Add the beaten eggs, a little at a time, beating thoroughly to combine after each addition.

Sift together the flour and baking powder into a separate bowl then fold into the liquid mixture. Now stir in the milk, beat lightly and pour the batter into a greased and lined 18cm diameter springform cake tin.

Transfer to an oven pre-heated to 180°C and bake for between 40 and 45 minutes, or until the cake is golden brown and springy to the touch (a skewer inserted into the centre should emerge cleanly).

Set aside to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely. This cake should be stored in an air-tight tin — it keeps very well.
