This is a classic Zulu dish from South Africa that's based on the street food of Soweto.
Ingredients:
4 tbsp oil
1kg mutton, cut into bit-sized pieces
4 medium onions, chopped
500g carrots, scraped and sliced
2 large tomatoes, chopped
salt and freshly-ground black pepper, to taste
75g plain flour
Method:
Heat the oil in a pan and use to brown the meat. Now add the onions, carrots an tomatoes then season to taste. Bring to a simmer and cook gently for 45 minutes, or until the meat is cooked through and tender (add a little water if the mixture is drying too quickly).
Now mix the flour with a little water to form a thick, smooth, paste. Add this to the casserole, return to a simmer and continue cooking until the mixture is thick.
