I was visiting a friend in the USA recently, who is originally from Virginia and is quite a wild forager herself. We put our heads together and came up with this recipe for making Southern-style biscuits (basically savoury scones) that are fried in oil, Indian-style.
Prepare the baking mix and turn into a bowl. Add just enough of the water so the baking mix is moistened sufficiently to hold together as a fairly crumbly dough.
Knead very lightly then turn out onto a floured work surface and pat into an oblong about 12mm thick. Use a floured knife to cut into squares about 5cm per side.
Place oil to a depth of about 12mm in a deep frying pan or skillet. When hot, carefully add the dough squares. Fry for about 5 minutes per side, or until golden brown all over and cooked through. Serve as an accompaniment to any main meal of a stew or that is accompanied by gravy.
