Huffkins are a traditional Kentish yeasted cake that have a well in the middle that's filled with cherries or jam.

Ingredients:

550g plain flour
125g butter, cubed
2 tsp sugar
1 tsp salt
15g fresh yeast
120ml whole milk
120ml water

Method:

Sift the flour into a bowl then add the butter and rub into the flour with your fingers until the mixture resembles fine meal then mix-in the sugar and salt. Set aside then combine the milk and water in a pan and heat gently until it just reaches body temperature, Take off the heat then mix in the yeast and whisk until thoroughly blended. Pour the resultant mixture into the flour blend then stir wit ha fork to combine and use your hands to bring the mix together as a dough.

Knead the dough thoroughly then transfer to a clean bowl, cover with a cloth and set aside in a warm place for 90 minutes, or until nicely risen. Knock the dough back after this time and divide into twelve equal parts. Roll these into balls, flatten slightly between your hands then use your thumb to form a deep well in the centre of each. Transfer to a lightly-greased baking tray. Cover with a clean cloth then set aside in a warm spot to rise for 20 minutes.

Transfer to an oven pre-heated to 220°C and bake for 20 minutes, or until the huffkins are golden brown. Remove from the oven, allow to cool for 10 minutes then fill the centres with cherries of jam and serve warm.
