Ingredients:

100g butter
100g brown sugar
250ml honey
1 egg
150g plain flour
1/2 tsp pumpkin pie spice (mixed spice)
75g blanched almonds, finely chopped

Method:

In a bowl, cream together the butter and brown sugar until pale and fluffy then work in the honey until thoroughly combined. Add the egg and beat until completely mixed in. Sift over the flour and spice blend then stir until just combined. Add the almonds and fold into the mixture until just combined.

Grease and flour a baking tray. Drop the batter onto the baking tray by the tablespoon, adding enough space between each heap to allow the biscuits to spread. Transfer to an oven pre-heated to 170°C and bake for about 15 minutes, or until just browned around the edges.

Allow to cool on the baking tray for 10 minutes then transfer to wire rack to cool completely.
