Home-made Doughnuts is a traditional American recipe for a classic deep fried doughnut made from a milk, shortening, sugar, egg, and flour dough leavened with baking soda that's deep fried and which can be served for luck as part of a New Year's day meal. Ingredients:
2 tbsp white vinegar
100ml milk
2 tbsp vegetable shortening
100g white sugar
1 egg
½ tsp vanilla extract
250g plain (all-purpose) flour, sifted
½ tsp baking soda
¼ tsp salt
1l oil for deep frying
For decorating:
55g icing (confectioners') sugar for dusting or
100g granulated sugar mixed with ½ tsp ground cinnamon or
your favourite icing
Method:
Stir the vinegar into the milk, and let stand for a few minutes until thick.
In a medium-sized bowl, cream together the shortening and sugar until smooth. Beat in the egg and vanilla until well blended. Sift together the flour, baking soda, and salt; then stir into the sugar mixture, alternating with the vinegar and milk. Roll the resultant dough out on a floured work surface to about 1cm thickness.
Cut into doughnuts using a doughnut cutter. Let the rings rest for about 10 minutes.
Heat the oil in a large deep pan or wok or deep fryer to 190°C. Fry the doughnuts in the hot oil until golden, turning over once. Drain on kitchen paper.
Dust with icing sugar or cinnamon sugar or glaze with icing while they are still warm, and serve immediately.
