Home-made Bran Flakes

Ingredients:

300g bran
300g whole-wheat flour
75g non-fat milk powder
3 tbsp brewer's yeast (optional)
1 tsp salt
60ml oil
1 tbsp treacle (molasses)
250ml water

Method:

Combine all the dry ingredients in a bowl. Form a well in the centre then ad he oil, treacle and water. Mix thoroughly and bring together as a dough. Divide into three equal portions and roll out as thinly as possible (preferably directly on well-greased baking trays.

Transfer to an oven pre-heated to 170°C and bake for between 15 and 20 minutes, or until lightly browned and nicely crisp (if the dough is not completely dry then turn off the oven and allow the dough to remain there until dry. Remove from the oven, allow to cool and harden then break into small pieces and store in an air-tight container (makes 500g or cereal).
