Ingredients:

2 envelopes unflavoured gelatine (15g powdered gelatine)
120ml orange juice
250ml skim (fat-free) milk
240g cream cheese, softened
65g granulated sugar
1 tsp vanilla extract
1/2 tsp freshly-grated orange zest
330g tinned mandarin orange segments
600g crushed pineapple (unsweetened), with juice
240ml
75g chocolate Graham cracker crumbs

To Garnish:
chocolate Graham cracker crumbs
whipped cream
Halloween sweets (candies)

Method:

Combine the gelatine and orange juice in a bowl and set aside to stand for 5 minutes. In the meantime, bring the milk to a boil then immediately pour into the gelatine mix and stir to combine. Process the mixture with a hand blender until thoroughly combined then add the cream cheese, sugar, vanilla extract and orange zest then blend once more. Now add the mandarin orange juice and the pineapple to the mixture and blend once more.

Fold in the whipped topping then divide half the mandarin orange segments and half the pineapple between 8 glass dessert dishes. Layer half the gelatine mix over the top then add half the cracker crumbs. Add another layer of the gelatine mix and crumbs then top with the remaining mandarin orange segments.

Transfer to a refrigerator and chill for at least 4 hours. Immediately before serving garnish with a few more breadcrumbs and a large dollop of whipped cream. Add some Halloween sweets (candies) and serve.
