Ingredients:
350g cooked chicken, de-boned and cut into small pieces
3 medium onions, thinly sliced
6 tbsp chicken stock
350g mashed potatoes
salt and freshly-ground black pepper, to taste
oil for frying
spring onions, sliced into rings, to garnish
Method:
Heat the oil in a large frying pan, add the onions and fry for about 5 minutes, or until tender. Combine the chicken pieces and the mashed potatoes in a bowl. Season to taste with salt and black pepper then work in the chicken stock until the mixture is creamy.
Turn into the frying pan and spread out evenly, flattening the top. Continue frying the mixture until the bottom is well crisped an browned then carefully fold over half the mixture on top of the other half (like an omelette) then carefully slide out onto a warmed plate.
