Ingredients:

2 slices of dark rye bread, trimmed into coffin shapes
3 slices mature Cheddar cheese
90g thinly-sliced roast beef or pastrami
100g thinly-shredded lettuce
60ml mayonnaise
1 drop of green food colouring
30g butter

Method:

Melt the butter in a non-stick pan over medium heat. Add the pieces of bread to the pan and allow to absorb the butter.

Set the cheese on top of the slices then top with the beef. Fry for 1 minute then carefully press the two pieces together to form a sandwich. Continue to turn the sandwich and fry until the bread is toasted and the cheese has melted (repeat the process for more sandwiches).

Arrange the shredded lettuce in a pile on a serving plate then lean the sandwiches against this so they stand partially upright. Combine the mayonnaise and food colouring in a bowl and arrange in a neat pile on the plate. Serve warm.
