Ingredients:

6 thick swordfish steaks
100ml dry sherry
1 1/2 garlic cloves, minced
2 1/2 tsp ginger, minced
1 1/2 tsp finely-grated lemon zest
240ml soy sauce
1 1/2 small carrots, minced
1 1/2 tbsp red bell pepper, minced
3 spring onions, finely chopped
3 tbsp extra-virgin olive oil

Method:

Combine the soy sauce, sherry, carrot, garlic, bell pepper, ginger, lemon zest and spring onions in a bowl and whisk to combine. Arrange the fish in a shallow glass dish and pour over the marinade. Turn the fish to coat in the marinade mix. Cover and set aside to marinate for 1 hour.

Pre-heat your barbecue. When ready to cook, drain the fish and pat dry then brush with the olive oil. Place on your barbecue and cook about 10cm from the coals for about 5 minutes per side, or until the fish is cooked through and flakes easily with a fork.
