Green Tomato Soup

This soup is an excellent way of using-up some of those green tomatoes left-over in early autumn which are never going to ripen fully.

Ingredients:

25g butter or margarine
450g green tomatoes, sliced
225g potatoes, peeled and sliced
1 onion, chopped
1.2l stock or water
1/4 tsp dried sage, crumbled
300ml whole milk
salt and freshly-ground black pepper, to taste
chopped parsley, to garnish

Method:

Melt the butter in a pan and use to fry the tomatoes, potatoes and onion for about 10 minutes, or until softened. Add the stock (or water) and crumble in the sage then season to taste with salt and black pepper. Bring the mixture to a boil then reduce to a simmer and cook for 30 minutes, or until the vegetables are tender.

Pass the soup through a fine-meshed sieve, pressing down on the solids with the back of a spoon to purée. Return the sieved mixture to the pan, stir in the milk and gently re-heat.

Serve hot, ladled into bowls and garnished with chopped parsley.
