Graveyard Dessert is a modern American recipe for a classic Halloween dessert or cream cheese and cool whip cheesecake with a chocolate wafer topping and sandwich biscuits decorated like gravestones. The full recipe is presented here and I hope you enjoy this classic American version of: Graveyard Dessert.
Begin with the crust. Combine the chocolate wafer crumbs, sugar and melted butter in a small mixing bowl. Stir to combine then press firmly into a baking tin (about 22 x 33 x 5cm) that's been greased and floured. Transfer to an oven pre-heated to 170°C and bake for 10 minutes then allow to cool before chilling completely in the refrigerator.
Once the crust has cooled, prepare the filling. Combine the cream cheese and 120ml of the cool whip in a bowl and beat to combine. In another bowl, combine the boiling water and jelly then stir until completely dissolved. Mix together the ice cubes and cold water, so that you have 360ml total volume. Stir the ice mix into the jelly mix until thickened. Remove any remaining ice cubes at this point. Now pour the cream cheese mixture over the crumb crust and spoon the jelly mixture over the top of this.
Transfer to the refrigerator and chill until firm (at least 3 hours). At this point spread the remaining cool whip over the top of the jelly layer.
To finish, sprinkle the remaining chocolate wafer crumbs over the top and stick in the sandwich biscuits at a rakish angle, to act as gravestones. Decorate these with the icing then scatter the candy corn and candy pumpkins attractively around the surface. Serve chilled.
