Gombos de Poisson Sec (Dried Fish with Okra) is a traditional Chadian (from Chad) recipe for a classic stew of dried and salted fish with tomatoes and onion in a spiced base thickened with dried okra powder. Ingredients:
1 large onion, chopped
4 large tomatoes
2 tbsp oil
500ml water
500g dried salted fish, cut into small pieces
salt and cayenne pepper, to taste
150g dried okra powder
Method:
Heat the oil in a saucepan. Add the onion and tomatoes and fry for about 5 minutes. Add the dried fish and the water then bring to a boil and cook for 10 minutes.
Season to taste with salt and cayenne powder then work in the dried okra powder.
Bring back to a boil and cook for 20 minutes stirring regularly. Reduce to a simmer and continue cooking for 15 minutes.
