This is the classic flapjack recipe made with oats, butter, sugar and golden syrup. You can jazz them up by adding dried fruit, nuts, seeds chocolate chips or coconut if desired.
Ingredients:
250g jumbo porridge oats
125g butter, plus extra to grease the tin
125g light brown sugar
2–3 tbsp golden syrup (depending on how gooey you want it)
Method:
Pre-heat your oven to 200C (180C fan/gas mark 6).
Combine the oats, butter, sugar and golden syrup in a food processor and pulse until mixed — be careful not to over-mix or the oats may lose their texture.
Lightly butter a 20 x 20cm baking tin and add the oat mixture. Press into the corners with the back of a spoon so the mixture is flat, then score into 12 squares.
Transfer to the centre of your pre-heated oven and bake for around 15 minutes until golden brown.
Remove from the oven and allow to cool in the tin for 10 minutes. Now divide into bars, turn out onto a wire rack and allow to cool completely before storing or serving.
