Gliko Kitromilo (Bitter Oranges in Syrup)

In reality, this is a preserve or bitter orange skins in syrup. You could use ordinary orange skins or any citrus fruit skin in place of oranges in this recipe.

This is a classic example of 'glyka tou koutaliou', or spoon sweets. These jewel-like preserves, lovingly prepared from fruit, vegetables, and even flowers, are a symbol of warmth, generosity, and cultural continuity. They are often served to welcome a guest into the house.

Ingredients


20 bitter oranges (eg Seville oranges)
1.5kg sugar
750ml cold water
2 tbsp lemon juice
1/2 tsp vanilla powder

Method:

Thinly grate the oranges to remove a little of the zest. Cut the skins in quarters and pare off the oranges then scrape the fibrous part of the pith from the inside.

Roll the skins and tie with thread so that they remain rolled whilst cooking. Place in a glass bowl and cover with water. Set aside for 3 days, changing the water daily (this removes the excess bitterness).

On the fourth day place the orange skins in a pan of boiling water and cook gently for about 20 minutes, or until softened.

Drain the orange skins and pat dry with kitchen paper. Pour the 750ml water into a small saucepan, add the sugar and heat gently, stirring frequently, until the sugar dissolves. Add the rolled orange skins and bring to a boil. Cook on high heat for about 40 minutes, or until the syrup thickens.

After 35 minutes add the vanilla and lemon juice. Cook for 5 minutes more then take off the heat and set aside to cool then spoon into cleaned and sterilized jars. Secure the lids on the jars and keep in a cool, dark cupboard out of the sun.
