Girdle is the Irish term for a griddle and these scones were traditionally cooked on a griddle pan. The same basic scone mixture can be converted into Elcho Scones and Irish Treacle Scones.
Ingredients:
240g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp cream of tartar
1/2 tsp salt
45g lard
150ml buttermilk (see the home-made buttermilk recipe for making your own)
Method:
Sift together the flour, bicarbonate of soda, cream of tartar and salt into a bowl. Add the lard (diced) and rub into the flour until the mixture resembles fine crumbs.
Add the buttermilk and mix to a smooth dough, adding a little extra buttermilk if needed. Turn the resultant dough out onto a lightly-floured work surface and knead lightly.
Using hands coated in flour, form the dough into small, flat, rounds about 12mm thick then place on a lightly-greased baking tray. Transfer to an oven pre-heated to 220°C (Gas Mark 7) and bake for about 12 minutes, or until cooked through and golden brown.
