Ingredients:

500g plain flour
1 1/2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/4 tsp salt
100g granulated sugar
100g butter or shortening
1 egg
250ml black treacle (molasses)
1 tsp baking soda
1 1/2 tsp warm water
50g seedless raisins (to decorate)
black icing

Method:

Cream together the butter and sugar until pale and fluffy. Beat in the egg until thoroughly combined then warm the treacle until liquid and beat this into the butter. Dissolve the baking soda in the warm water and beat this into the mixture.

Continue beating until smooth then slowly work in the flour, spices and salt. Mix until thoroughly blended then bring the ingredients together as a dough. Cover with clingfilm (plastic wrap) and refrigerate for 24 hours.

After this time, turn the dough out onto a lightly-floured work surface and roll out to about 6mm thick. Cut out gingerbread men shapes using a pastry cutter then transfer these to a lightly-greased baking tray. Press in raisins to make buttons and noses then place in an oven pre-heated to 170°C and bake for bout 10 minutes, or until golden.

Remove from the oven and cool on a wire rack. When cold, use black icing to make "X"es where the yes should be and to paint grimaces or tombstone teeth on the face.
