Irish Ginger Cake

Ingredients:

60g butter
120g brown sugar
2 eggs, beaten
2 tbsp black treacle (molasses) or golden syrup (light corn syrup)
1 tsp finely-grated lemon zest
240g plain flour
pinch of salt
4 tsp baking powder
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
240ml boiling water

Method:

Cream together the butter and sugar in a bowl until light and fluffy. Add each egg, alternating with the treacle and beating thoroughly to combine with each addition. Next stir in the lemon zest.

Sift together the flour, salt, baking powder and spices into a separate bowl then fold into the creamed mixture. Add the boiling water and mix thoroughly to combine. Turn the resultant batter into a well-greased 22cm diameter cake tin.

Transfer to an oven pre-heated to 180°C and bake for between 40 and 45 minutes, or until the cake is springy, yet firm to the touch.

Allow to cool in the tin for 5 minutes then turn out onto a wire rack to cool completely before slicing and serving.
