Gateaux de Fonio (Fonio Muffins)

Gateaux de Fonio (Fonio Muffins) is a traditional Malian recipe for a classic dessert of muffins made from a blend of wheat flour and fonio millet flour with dry milk powder and vanilla sugar. Ingredients:

500g fonio flour
500g wheat flour
640g sugar
125g margarine, melted and cooled
125g dry milk powder
3 eggs
25g baking powder
30g vanilla sugar
500ml water (about)

Method:

Dissolve the sugar in the water then beat in the eggs, milk powder and melted margarine. Beat the mixture until smooth then gradually work in the flours(sift these together first).

Work the ingredients together with a spatula until smooth then cover and set aside to rest for 30 minutes.

After this time, work the baking powder into the batter. Turn this mixture into greased muffin wells, filling the wells no more than half full.

Transfer to an oven pre-heated to 200°C and cook for 10 minutes. Reduce the heat to 180°C and bake for about 10 minutes more, or until nicely coloured and springy to the touch.

Allow the muffins to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely before storing or serving.

Typically these are served as a dessert, accompanied by tea.
