Galidossi

Galidossi is a traditional Togolese (from Togo) recipe for a classic poridge of milk sweetened with sugar and thickened with gari (cassava semolina) that can also be served as a drink. The full recipe is presented here and I hope you enjoy this classic Togolese version of: Galidossi.

This is a classic Togolese breakfast dish or drink made from milk and gari.

Ingredients:

250ml milk
1 tsp gari (cassava semolina)
sugar, to taste

Method:

Pour the milk into a bowl and stir in the gari. Whisk to combine then set aside for the gari to swell for 15 minutes.

Sweeten to taste then transfer to the refrigerator and chill for at least 2 hours.

Serve well chilled in a bowl as a porridge or in a glass as a drink.

As a breakfast porridge it's often served topped with roasted peanuts.
