Ingredients:
4 tbsp olive oil
750g red and yellow bell peppers, cut into strips
4 garlic cloves, sliced lengthways
1 tbsp capers (the salt-preserved variety)
2 tbsp white wine vinegar
salt and black pepper, to taste
Method:
Add the oil to a frying pan and when hot use to cook the peppers, stirring frequently, until the skins begin to char around the edges. Add the garlic and peppers and cook for about 4 minutes, or until they begin to sizzle. Add the white wine vinegar and season to taste.
Continue cooking until almost all the vinegar has evaporated then turn into a serving bowl. This can either be served hot as a side dish or it can be cooled and refrigerated to be served as a salad.
