Fried Pawpaw

This Malawi dish is typically served as a vegetable to accompany roasted or barbecued chicken or guinea fowl.

Ingredients:

1 pawpaw (papaya) — this should be slightly under-ripe
4 tbsp fresh breadcrumbs
1 tbsp plain flour
1 egg, beaten
oil for deep frying

Method:

Peel the papaya, halve lengthways and scoop out the seeds. Slice the fruit into pieces about 2cm thick.

Dust the slices with the flour then dip in the beaten egg before coating in the breadcrumbs.

Deep fry in oil heated to 180°C until golden brown all over, drain on kitchen paper and serve hot as an accompaniment.
