This is a modern twist on a classic old-fashioned Christmas leftovers dish. My grandfather used to fry left-over Christmas pudding in goose fat for breakfast after Christmas. This is my own version of that dish, dressed up as a dessert.
Ingredients:
1 orange , peeled and sliced into thick rounds (remove any pips)
25g icing sugar
1 tsp ground cinnamon
25g butter
3 slices of left-over Christmas pudding
Begin with the oranges. Arrange on a baking tray and dust with the icing sugar and cinnamon. Place under a hot grill and cook for about 4 minutes, or until golden brown.
In the meantime, melt the butter in a frying pan. When foaming, add the slices of Christmas pudding and fry for about 3 minutes on each side, or until lightly golden and heated through.
Combine the whipped cream, ground cinnamon and icing sugar in a bowl and stir to combine.
To serve, arrange the fried Christmas pudding on a plate then top with the cream mixture. Arrange the grilled orange slices around the outside of the dish and serve.
