For the Streusel Topping:
50g dry baking mix
45g brown sugar
2 tbsp butter
1 tsp ground cinnamon
45g chopped nuts
Method:
Combine the cake ingredients (except the apples) in a bowl. Beat until smooth then fold-in the apples. Spread this mixture in a lightly-greased 3.5l crockpot (or set a baking dish in a larger crockpot).
Now combine all the Streusel topping ingredients in a bowl using a fork and scatter over the top of the apple batter. Cover and cook on high for about 150 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.
Uncover the crockpot and leave the cake to cool completely. When the cake is cool enough to handle carefully loosen the sides with a knife then lift out with a spatula. Transfer to a serving plate, with the Streusel topping uppermost and serve.
