Frankfurter Skewers with Garlic Toast: Classic British recipe for a barbecue dish of frankfurters, courgettes, corn cobs, cherry tomatoes and baby onions served with garlic toast.

Ingredients:

12 frankfurters
2 courgettes (zucchini), cut into 1cm slices
2 corn cobs, cut into 1cm slices
12 cherry tomatoes
12 baby onions
2 tbsp olive oil

For the Garlic Toast
2 garlic heads
3 tbsp olive oil
1 baguette, sliced
salt and freshly-ground black pepper, to taste


Method:

For the garlic toast slice off the tops off the garlic heads. Brush the garlic with oil and wrap in kitchen foil. Place on a barbecue over hot coals and cook, turning occasionally, for 30 minutes.

In the meantime, divide each frankfurter into three equal-sized pieces. Thread the frankfurter pieces onto skewers, alternating with the courgette slices, corn cob slices, cherry tomatoes and baby onions.

Brush with olive oil then place on your barbecue and cook, turning frequently and brushing with oil as you turn for about 10 minutes.

In the meantime, brush the baguette slices with the oil and toast on both sides on the barbecue. Unwrap the garlic and squeeze the cloves onto the toasted bread. Season to taste with salt and black pepper then drizzle over a little extra olive oil.

Transfer the cooked skewers onto a serving plate and serve accompanied by the garlic toast.
