Flapjack II

Flapjack II is a traditional English recipe for a classic blend of butter, sugar, syrup, rolled oats and raisins that's packed into a baking tin, baked until golden and cut into rectangular bars before serving. This is the classic moist syrup and oat biscuit that's become so popular of late with the desire for 'healthy' energy foods. This is very much the basic recipe to which other fruit, nuts and coconuts can be added.

Ingredients:

120g butter
110g brown sugar
60ml golden syrup (corn syrup)
250g rolled oats
40g raisins

Method:

Combine the butter, brown sugar and golden syrup in a saucepan over very low heat. Cook, stirring frequently, until the sugar has all melted then take off the heat, stir-in the oats and raisins and pour into a lightly-greased 20cm square baking tin (you're aiming for a mixture about 2.5cm thick).

Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 30 minutes, or until the top of the flapjacks are golden. Remove from the oven, cut into squares or rectangles then allow to cool completely before removing from the pan and dividing.
