Elioti (Oven-baked Olive Bread)

Ingredients:

400g plain flour
180ml olive oil
3 tsp baking powder
250ml evaporated milk
100g black olives, pitted and finely chopped
50g onions, chopped
1 tsp dried mint, powdered

Method:

Sift together the flour, baking powder and powdered mint into a bowl.

Heat the oil in a frying pan, add the onions and olives and fry for about 6 minutes, or until lightly browned. Take off the heat and set aside to cool.

Once cooled, turn the complete contents of the frying pan into the flour. Knead well to combine then add the milk and knead thoroughly once again.

Cover with a thick tea towel and set aside for 60 minutes.

Butter a loaf tin and place the bread dough in this. Transfer to an oven pre-heated to 180°C and bake for about 60 minutes, or until well risen and golden brown on top (the loaf should sound hollow when rapped on its base).

Turn out onto a wire rack and allow to cool. The bread can be served warm or cold.
