Elder Vinegar is a traditional British recipe for a classic infusion of white wine or cider vinegar with elderflowers and peppercorns that was commonly used from the late Elizabethan to the Victorian periods. Method:

Add the peppercorns and elderflowers to a sealable jar (a Kilner jar is ideal), pour over the vinegar then seal and refrigerate for two weeks.

After this time, pass through a fine-meshed sieve, discard the flowers and spices then seal the resultant vinegar in sterilized bottles.
