This is a layered Chinese dessert of glutinous rice and cooked dried fruit.
Ingredients:
225g glutinous rice
100g sugar
2 tbsp vegetable fat
2 dried kumquats, finely chopped
3 prunes, finely chopped
5 dried red dates, soaked in warm water for 20 minutes then finely chopped
1 tsp raisins
12 lotus seeds (soak these in warm water for 1 hour if dried)
100g sweet red bean paste
Method:
Wash the rice then soak in a bowl of cold water for at least 2 hours.
Drain the rice, place in a steamer basket and steam over boiling water for about 20 minutes, or until tender. Drain the rice again then set aside to cool.
Once cooled mix in the sugar and vegetable fat (using your hands) so that you have a sticky mass.
Arrange the dried fruit and seeds in the base of a clear pudding basin. Top with half the rice mixture then press down to compact and smooth the top.
Spread the bean paste over the rice then top with the remaining rice mixture. Press down once more then smooth the top.
Place in a steamer basket and steam the pudding for 20 minutes. Take out of the steamer and set aside to cool slightly, then turn out onto a plate.
Cut the cake into small slices at the table and serve.
