Ingredients:
250g Unsalted Butter
200g Light Brown Sugar (or Demerara sugar)
5 tbsp Golden Syrup (or honey, agave syrup or maple syrup)
350g rolled Oats — instant or quick rolled oats for a soft texture jumbo rolled oats for a chewy texture
Method:
Pre-heat your oven to 180°C 160°C fan / gas mark). Line your baking tin with baking parchment and set aside (leave an overhang to aid with extracting the flapjacks).
Combine the Butter, Light Brown Sugar and 5 tbsp in a saucepan. Set over low heat and melt ingredients together. Do not allow the mixture to boil.
Once melted turn off the heat and add in the Oats. Stir the oats into the butter, sugar and syrup until well coated and the mixture forms a sticky mass.
Turn this mixture into the lined baking tin then smooth down with a spatula, pressing into the corners.
Transfer to the centre of your pre-heated oven and bake for 15–20 minutes, until the edges are lightly golden.
Remove from the oven, and don’t be tempted to turn the flapjack mixture from the tin.
Set aside to cool in the tin for at least 30 minutes. Once the tin has cooled down, place it in the fridge. This will cool the flapjack mixture quicker and make it set hard. The longer the better for neater cuts I suggest at least 2 hours.
Once the flapjack is completely cooled and firm, gently lift the flapjack slab out with the baking parchment overhangs.
Use a sharp knife to cut into rectangles or squares. This recipe provides 8 large rectangular flapjacks or 16 treat size squares. Serve at room temperature
