Ingredients:
500 g chilled chicken liver
1 shallot
1 garlic clove
1 tbsp butter
1 tbsp lard
a pinch of grated nutmeg
4 sprigs of thyme
250g butter (reserve 50 g for later use)
150ml 31% fat whipping cream
2 tbsp almond flakes
2 tbsp dried chopped cranberries
freshly ground pepper
salt
Method:
Wash, clean and dry the liver then divide into small pieces.
Melt together the lard and butter in a pan. Add the shallot and fry for about 4 minutes, until soft and translucent. Now add the thyme leaves and fry until fragrant.
Add the liver and fry vigorously for 5 minutes. It must not be bloody, but should must remain pink inside. Add salt, black pepper and nutmeg. Pour in the cream and let it bubble for a minute. Remove from the heat and set aside to cool.
At this point, transfer the mixture to a blender and add 200g of completely soft butter. Blend until smooth. Add salt to taste if necessary. Add the almond flakes and cranberries and arrange in bowls.
Let the rest of the butter warm up and cool slightly. Pour the butter over the surface of the liver in each bowl. Let it set in the fridge. Serve on a fresh or toasted baguette.
