In essence this is a recipe for quick buttermilk, all without the churning or the use of bacterial cultures. Just warmed milk and lemon juice.

Ingredients:

1l milk
225g sugar
juice of 1 large lemon
finely-grated zest of 1 large lemon

Method:

Combine the milk, sugar and lemon zest in a pan. Bring just to a boil. Stir in the lemon juice and bring back to a boil.

Cook until the milk has thickened. Take off the heat and allow to cool. Chill for at least 1 hour.

Serve cold in crystal goblets.
