Ingredients:
50g butter or margarine
200g chopped onion
100g chopped celery
1 garlic clove, crushed
1/2 tsp salt (optional)
1/4 tsp ground black pepper
700ml chicken broth
1 bouillon cube
500g cooked pumpkin
220ml sour cream
chopped chives or spring onion tops
cream, to garnish
Method:
Melt the butter in a large saucepan and fry the onion, celery and garlic until soft. Season with salt and black pepper then cook for 1 minute further. Add broth and bouillon cube then simmer, uncovered, for 15 minutes.
Stir in the pumpkin and sour cream cook for 5 minutes, stirring occasionally to blend. Serve warm, toped with chopped onion and garnished with a swirl of cream.
