Ingredients:
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, finely chopped
400g courgettes (zucchini) thickly sliced
1 tsp thyme leaves, chopped
1 tsp fresh oregano chopped
1 tbsp tomato purée
440g tin chopped tomatoes
3 fresh plum tomatoes, chopped
salt and black pepper, to taste
Method:
Heat the oil in a heavy-based pan over medium heat and use to fry the onion and garlic for about 6 minutes, or until the onion is soft. Add the courgettes and cook for 5 minutes more then stir-in the herbs.
Add the remaining ingredients and stir to combine. Bring to a simmer and cook for 10 minutes, or until the courgettes are just tender. Season to taste and serve on a bed of rice or pasta.
