Cornelian Cherry Jam is a traditional British recipe, based on Victorian original for a classic jam made from sugar and Cornelian cherries cooked together until they reach the gelling point. Combine the sugar and water in a pan, bring to a boil and cook, stirring occasionally, until the mixture becomes white and falls in masses from the spoon.
Add the prepared Cornelian cherries and cook, stirring frequently, for five minutes. Test for the setting point by spooning a little of the jam onto a plate that has been chilled in the fridge. If the jam forms a skin when you move it with your finger then it's reached the setting point. If it does not then you should continue boiling for 5 more minutes and test again.
Skim the surface of the jam then stir in the butter (this will dissipate any remaining scum). Allow the jam to cool a little then pour into warmed, sterilized, jars then allow to cool and cover with airtight lids.
