Collard Greens with Ham Hocks is a Soul Food and Southern staple recipe, it's also a dish to invite good fortune for the new year, with the green coloured collards and the pork (both good fortune foods). Serve accompanied by your favourite hot sauce and cornbread to mop up the pot likker.

Ingredients:

1.5kg collard greens, cleaned and chopped
2 ham hocks
2.25l chicken stock
750ml water
25g onion, chopped
3 garlic cloves, minced
4 tbsp white vinegar
1 tsp chilli flakes
1 tsp ground black pepper
2 tsp salt

Method:

In a large pan, combine the chicken stock and water. Add the chopped onion, minced garlic, and ham hocks to the pan.

Bring the mixture to a boil over medium-high heat. Once boiling, cover the pan and let it cook for 15 minutes. After 15 minutes, remove the lid and add half of the collard greens.

Cover the pan again and continue cooking for 10 minutes. This will allow the first batch of greens to begin to wilt and cook down.

After 10 minutes, add the remaining collard greens to the pot. Cover and cook for another 10 minutes. Once the greens have cooked down, season with 2 tsp of salt, 1 tsp of black pepper, and 1 tsp of chilli flakes. Pour in the 4 tbsp of white vinegar. Stir everything thoroughly to ensure the greens are evenly coated with the seasonings.

Cover the pan and reduce the heat to low. Allow the collard greens to simmer for 1 hour. This slow cooking will ensure the greens are tender and infused with flavour.

Once cooked, serve the collard greens hot, preferably alongside cornbread and your favourite soul food dishes.
