Chocolate Chip Scones is a traditional English recipe for a classic tea-time cake made from a flour, sugar, butter and orange juice dough leavened with baking powder and incorporating chocolate chips that's cut into rounds and oven baked until well risen. Ingredients:
225g plain flour
70g granulated sugar
2 tsp baking powder
1/2 tsp salt
70g unsalted butter, cubed
100g dark chocolate chocolate chips
50ml orange juice
Method:
Beat together the butter and sugar until light and fluffy. Meanwhile sift the flour, baking powder and salt into a separate bowl before adding to the creamed butter mixture. Beat together then add the chocolate chips. Add just enough orange juice to the mixture so that you get a fairly stiff but even dough.
Turn the dough onto a floured surface and roll out to about 1.5cm thick. Using a 6cm fluted pastry cutter cut out 12 scones from the mixture. Transfer the scones to a greased baking sheet and place in an oven pre-heated to 200°C (400°F/Gas Mark 6). Bake for about 12 minutes, or until the scones are golden brown and cooked through.
Transfer to wire racks and allow to cool before serving.
