Chocnut Logs is a traditional British recipe for a classic sweet (candy) of marzipan (almond paste) spread with chocolate and nuts that's rolled into a log and dipped into melted chocolate to coat that are decorated with fennel for Christmas. The origin of this classic Christmas sweet (candy) is French. Here they have been adapted slightly with the addition of nuts.
Ingredients:
225g (8 oz) marzipan (almond paste)
2 tbsp nutella (or other chocolate-based spread)
50g (2 oz) Brazil nuts, chopped
To Finish:
75g (3 oz) dark chocolate, melted
a little icing sugar, sifted
small sprigs of fennel (or other fern-like herb)
Method:
Turn the marzipan onto a work surface lightly-dusted with icing sugar and roll out to a 20cm (8 in) square. Cut into four 5cm (2 in) squares.
Spread each square with the chocolate spread and sprinkle with the chopped nuts. Roll each square up like a Swiss (jelly) roll. Use the tines of a fork to mark the marzipan lengthways to give a long-like effect then cut each roll in half.
Dip in the melted chocolate to coat then use the tines of your fork to accentuate the log effect if needed. Set aside on a sheet of greaseproof (waxed) paper until the chocolate has hardened completely.
