Chicken pieces cooked in soy sauce and vinegar with garlic. This is a delicious Filipino chicken dish that you can eat for lunch with warm white rice. This is a national dish of the Philippines.
Ingredients:
1kg chicken (cut into serving-sized pieces)
3 dried bay leaves
4 tbsp soy sauce
6 tbsp white vinegar
5 garlic cloves
360ml water
3 tbsp cooking oil
1 tsp sugar
1/4 tsp salt
1 tsp whole black peppercorns
Method:
Combine the chicken, soy sauce, and garlic in a large bowl. Mix well. Marinate the chicken for at least 1 hour (the longer the time, up to over-night) the better.
Place a cooking pot over medium heat then pour in the cooking oil.
When the oil is hot enough, use to fry the marinated chicken for 2 minutes per side.
Pour-in the remaining marinade, including garlic. Add the water then bring to a boil
Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until the chicken becomes tender
Add the vinegar, stir to combine and cook for 10 minutes.
Stir in the sugar and salt, making sure they're fully dissolved. Turn off the heat off.
