This is a fusion recipe based on a traditional Mexican chia seed pudding. Despite being called a 'pudding' this is actually a breakfast dish and I love it on a frosty winter's morning.
Ingredients:
1l coconut milk, almond milk, or whole milk
6 tbsp chia seeds
sea salt, to taste
4 small bananas
4 dessertspoons runny honey
Method:
Place the milk in a saucepan, bring just to the scalding point, but do not boil. Take off the heat, whisk in the chia seeds then set aside to rest for 15 minutes, or until you have a chia gel. Whilst the mixing is standing, whisk a couple of times to prevent the chia seeds from clumping together.
Peel the bananas, slice over the top of the cooled gel mix then drizzle over the honey. Stir to mix then divide between four dishes and serve as a warm breakfast dish. If the mixture seems a little cold, you can warm to your liking.
