I love couscous and I came across this variant a while ago. The mix of grain and seeds will provide an adult human with all the amino acids they require for health. Add a good sauce and this makes an excellent meal.
Ingredients:
500ml good vegetable stock
150g mixed vegetables, finely diced (cabbage, carrots, parsnips, peas, French beans, etc)
120g couscous
2 tbsp chia seeds (or to taste)
knob of butter
Method:
Combine the stock and vegetables in a pan. Bring to a simmer and cook for about 15 minutes, or until the vegetables are just tender.
Stir in the couscous and the chia seeds then take off the heat and set aside to stand for 10 minutes (cover the pan with a lid or plate during this time).
Remove the lid, fluff the mixture and stir through the butter (if using). Divide between four plate and serve as an accompaniment.
