Chia Pan Bread

Ingredients:

4 tbsp ground chia seeds (milled seeds are best)
2 tbsp baking powder
4 tbsp strong white bread flour
2 eggs
1/2 onion, finely grated

Method:

In a bowl, combine the ground chia seeds, baking powder and bread flour. Mix thoroughly to combine then add the egg. Mix thoroughly into the other ingredients then turn out onto a floured work surface, add the onion and knead well until all the dry ingredients are incorporated into the dough and the mixture begins to look a little oily.

Work into a round, knead for a few minutes more then divide into four pieces and shape these into buns then flatten these between your palms.

Place a heavy-bottomed non-stick pan over medium heat. When hot, add the flatbreads and cover with a lid. Cook for a few minutes on each side until lightly coloured and heated through.

These can be served as an accompaniment (they are great with curries) and can also be served topped with jam and cream for tea. I also like them topped with mozzarella cheese and tomatoes and lightly grilled. A friend I know uses them as burger buns.
